Minestrone Soup for dinner the lazy way

We got lazy.

We forgot to pre-prepare our ingredients.
The weather is crazy and we wanted something soupy.

So we open up our fridge and take whatever we have and turn it into a Singapore style Minestrone Soup. It’s lighter in texture, with less tomatoes coz we are left with one and we added Marconi to it.

This way we get have a healthy soup an some carbo for our dinner 🙂

👍Singapore style Minestrone Soup

Serves 2
Ingredients

✅1 carrot
✅1 potato
✅1 onion
✅2 stalks of celery
✅1 tomato
✅1 chicken bones
✅2 scallops
✅Marconi
✅2 liters of water

Steps to becoming stronger
1️⃣Blanch chicken bone for 5 minutes,m
2️⃣Chop all the ingredients, carrot, potato, tomato in dices
4️⃣Cut the celery into pieces
5️⃣Add 1.5 litres water and Marconi, let the Marconi boil a while before adding in blanched chicken, onion, celery, carrot and tomato into a soup pot.
6️⃣Bring to a boil, then reduce to simmer for another 40 minutes.
7️⃣Add salt for taste
